Lentil soup is one bowl of brown sludge that I can really get behind. It hits that sweet spot of being not so unappetizing that you wouldn’t even try it, but being just unappetizing enough that the mental shock of how good it tastes compared to how it looks is enough to send an endorphin jolt running through your system.

Fried rice isn’t just for using up day-old rice; it’s also great for repurposing other leftovers in your fridge. We came up with this recipe with pork tenderloin in mind, but basically any meat you find out here now yourself with would be appropriate. You can also sub out the sweet corn and shishito peppers for whatever you have on hand that sounds tasty.

Here’s another recipe in my quest to take the cute and cuddly animals out of all of my favorite foods in a no-BS, as-delicious-as-the-real-thing, good-enough-for-anyone kind of way. I’m particularly happy with this one, which makes sense, as it’s a logical extension of my vegan mapo tofu recipe. I’m talking about the other great pillar of cheap-and-easy Sichuan cuisine: dan dan noodles.

Our original attempt at real-deal Chinese kung pao chicken , adapted from a recipe by a Sichuan chef working in Boston, gets its mouth-numbing heat from Sichuan peppercorns. So does the kung pao chicken from Kenji’s book , based on the version he tried in Sichuan Province. This Chinese-American take, meanwhile, is much less spicy, with cubes of chicken in a thick, slightly gloppy sauce, permeated by a gentle heat. It’s a quick and easy recipe, too: Just stir-fry marinated diced chicken with roasted peanuts, diced celery and peppers, ginger, and red Chinese or árbol chilies, then coat it all in a mixture of soy sauce, chicken broth, vinegar, sesame oil, sugar, and cornstarch. Dinner’s on the table in 30 minutes.

Done right, takeout fried rice is a thing of satisfying, well-balanced beauty. But it’s frequently served clumpy and over-sauced, or, worse, bland and oily. Making it at home gives you more control over the final dish, plus it’s a great way to use up leftovers. Our approach busts a few myths—no, your rice doesn’t have to be medium-grain, or day-old, for that matter. While this version calls for vegetables, like carrots and peas, you can easily bulk it up with pork , kimchi and Spam , Thai-style crab , chicken, or your protein and garnishes of choice.

Making the sauce for dan dan noodles is exceedingly simple once you’ve got the basic ingredients in your pantry. It’s just a matter of mixing them in the right proportions. Soy sauce forms the base, while Chinkiang black vinegar lends its characteristic acidity—it has a sweet, almost balsamic vinegar-esque aroma to it, though not quite as syrupy as that. Fermented broad bean chili paste comes in many forms throughout China or can be purchased online. Chili oil is a given, and while it’s best (and remarkably easy!) to make at home, there are a number of good options available at any decent Chinese market. Look for the kind which has actual chile, garlic, and ginger debris in the bottom of the jar, not the completely clear kind you see in easy-pour bottles. That debris is where the magic is at.

There are all kinds of variations on the dish that you’ll find in Chinese restaurants in the U.S. Some go the ultra-authentic, hardcore traditional route, while others remove some or even all of the heat from the dish, instead replacing it with a creamy sesame (or even peanut butter!) based sauce. To me, picking one version of dan dan noodles as the best is kinda like choosing my favorite Beatles album: It’s a constantly shifting debate, even with myself. Best plan is to just pick a path and run with it. This time I’m going for the more traditional approach. Obviously, modifying it for my vegan needs is going to alter that approach in practice (though not in spirit).

Cumin lamb falls into a wholly different category, however. Given that it’s slightly rich, has that wonderful cumin spice yet remains quasi-delicate on the palate, there are countless great pairings for this dish. Anything from S. Rhone/Languedoc stuff, to Cornas, to Loire Cab Franc, to Sangiovese, to Nebbiolo, to Burgundy… there are so many choices. Favorites of mine include the Cab Francs from Baudry (A bargain!), Montevertine “Pian de Ciampolo” from Tuscany, older Bordeaux (mostly left bank or Pomerol) and also the wines of Leon Barral. Transfer noodles to serving bowl and top with pork mixture. Stir vinaigrette and spoon over and around the noodles (you may not want to use all of it). Sprinkle with roasted peanuts, Sichuan peppercorn, grated garlic, and scallion greens. Serve immediately.
